La hipertensión arterial (HTA) es un trastorno en el cual los vasos sanguíneos tienen una tensión persistentemente alta. En Argentina, las enfermedades del sistema circulatorio representan la principal causa de muerte y la hipertensión arterial es un importante factor de riesgo para algunas patologías de este tipo.
En adultos, cuando el corazón se contrae (tensión sistólica) la tensión arterial normal es de 120 mm Hg y cuando el corazón se relaja (tensión diastólica) es de 80 mm Hg. La OMS califica de elevados a los valores de presión arterial sistólica de 140 mmHg o superiores y/o una presión arterial diastólica de 90 mmHg o superiores, en aquellas personas no tratadas con medicación específica.
Los factores de riesgo para la HTA son de dos tipos: modificables (el sobrepeso y la obesidad, el tabaquismo, el consumo elevado de sal, alcohol y cafeína) y los no modificables (la edad, la historia familiar y el sexo masculino).
El papel de la sal
La presión arterial aumenta con el incremento del consumo de sal hasta en personas con tensión arterial normal. Actualmente en nuestro país se aplican cantidades excesivas de sal, estimadas en 12-13g/día por habitante. La mayor parte proviene de alimentos procesados. En la dieta promedio, solo el pan aporta aproximadamente 4g. Otros aportes significativos los dan las carnes procesadas, las sopas deshidratadas y los aderezos. También aporta sal el agregado durante la cocción de los alimentos o en la mesa.
La OMS puso una meta a alcanzar para el 2020: que la ingesta de sodio no supere los 2 gramos diarios, equivalente a 5 gramos de sal (cloruro de sodio) por día. Al consumo superior a los 2 gramos diarios se le atribuyen 1,65 millones de muertes por causas cardiovasculares, es decir 1 de cada 10 muertes.
Consejos de las Guías Alimentarias para la Población
Reducir el uso de sal y el consumo de alimentos con elevado contenido de sodio.

- Cocinar sin sal.
- Evitar el salero en la mesa y reemplazarlo por otros condimentos como hierbas aromáticas, pimienta, jugo de limón o perejil.
- Evitar alimentos con elevado contenido de sodio como fiambres, embutidos, amasados de pastelería y productos de copetín.
- Leer las etiquetas de productos como conservas, caldos, sopas y aderezos, para identificar el sodio que contienen.
- Aumentar la ingesta de frutas y verduras.
- Disminuir el consumo de alcohol.
- Mantener un peso corporal saludable (o disminuirlo en casos de sobrepeso u obesidad)
- Evitar el consumo de tabaco.
- Realizar actividad física de intensidad moderada.

La medición de la tensión arterial es fundamental para detectar personas con valores elevados. En las Estaciones Saludables se puede realizar este control de manera rápida y gratuita. Desde su inicio en el año 2012, alrededor de 950.000 personas adultas controlaron su tensión arterial. De ellas, 1 de cada 5 presentó valores elevados, proporción que aumenta junto con la edad y es mayor entre los hombres.
