La necesidad de llevar una dieta Sin T.A.C.C. es imperiosa para los celíacos, así como la incorporación de alimentos naturales e industrializados aptos. En nuestro país no es tarea sencilla ya que el 80 % de los alimentos procesados industrialmente contienen gluten.
El gluten puede estar presente en los alimentos como: espesante, colorante, aromatizante, almidones, etc. Incluso, alimentos que no contienen TACC pueden elaborarse y/o envasarse en líneas donde existan productos que contienen gluten y de esta manera generar una contaminación cruzada.
En nuestro país no basta con leer las etiquetas de los productos, ya que muchas veces se desconocen los nombres técnicos de los ingredientes que aparecen en la composición, en donde puede estar presente el gluten, por lo que resulta indispensable conocer que alimentos industrializados son libres de gluten.
